Pork Hock [thick cut slices]
Sea Salt
Filtered Water [shallow] (simmered)
[Cooked meat (returned) separated from skin and bone (discarded).]

Yu Choy Stems (boiled separately, discarded)
Filtered Water (turned into stock)
[Stock ladled as necessary to maintain simmer.]
