London Broil (tawny port, fresh dried parsley, sea salt marinate)
Emmenthal Slices
Shallot Shavings (sparsely)

Limey Beef Short Ribs

Crosscut Short Rib (pieces medium-well)
Lime Juice (fresh)
Ginger (grated finely)
Garlic Clove (crushed)
Water (filtered)
Sesame Oil
Arrow Root
Fresh Dried Hot Pepper (crushed)
Worceshire Sauce (dashes)

Spicy Chicken Dune

Pestle and/or Mix-in
   Nutmeg
   Cardamom
   Nigella Seeds
   Mustard Seeds
   Garlic (minced)
   Chili Powder
   Ginger (grated)
   Yellow Powder (Turmeric primary)
   White Pepper
   Arrow Root

Water (filtered and stir)
Chicken (pre-steamed ripped/torn)
Tofu (optional)

Baked Cod Hot Chayote

Cod Medallions
Chayote (peeled and shaved)
Olive Oil
White Onion (chopped)
Lemon (juice)
Capers
Hot Sauce
Arepa Blanca (crispy)

Indo-Jamón Massaged
(Strong Belly [rub])

Mustard Oil
Tofu (firm, cubed, fried)
Ham (baked, then stripped, then dipped until crisp)

Tomatillo & Tomato (chutney)
Cilantro (chopped)
Red Chilies (hot)
Sour Cream (cold)
Coriander Seeds (not a lot, just too bold)
